Curry recipe of week

 

Onion Bhajis

 

 

 

2 Tbsp. vegetable oil or ghee

½ tsp. ground mustard seed

1 tsp. fenugreek seed

1 tsp. turmeric

1 medium onion, chopped fine

½ tsp. chilli powder

½ tsp. salt

1 beaten egg

½ tsp. chick pea (or plain) flour

enough oil to fill frying pan ½ inch /2 cm deep

 

 

 

 

METHOD:

 

  • Heat oil or ghee over high heat and fry spices, for 20-30 seconds. 

  • Stir in onion.

  • Reduce heat to low and continue cooking until onion is translucent.  Cool.

  • Add the salt, beaten egg and flour, stirring well.

  • Heat the ½ inch/2 cm deep oil in frying pan until very hot.  

  • Add tablespoonfuls of the onion mixture to the hot oil, turning frequently until they are brown and puffy.

  • Remove with slotted spoon and drain on paper towels.  Makes 4 appetizer portions.
